Vegan Welsh Cakes | Picau ar y Maen


Ingredients
  • 2 cups self raising flour
  • 1/2 cups vegan butter
  • 1/2 cup caster sugar (plus more for sprinkling later)
  • 1/4 cup sultanas
  • 1/4 cup raisins
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • plant milk
Instructions
  1. Measure all of your ingredients out and add them into a large mixing bowl, except for the milk and fruit. With your fingers, rub the mixture together until it becomes breadcrumbs; it should be crumbly and even. Next you'll need to add the dried fruit and mix it in.
  2. Add a small dash of milk and mix it in with your hands. Add a tiny bit at a time until the crumble mix turns into a dry dough; it should be dry enough that it isn't sticking to the bowl, but wet enough that it will stay in the ball. If the mix is too wet add some a bit of flour.
  3. Flour up your work surface and place the dough on it then flour up your rolling pin before rolling the dough until it is approximately 1cm thick (if they're too thick they wont cook through properly). Now you'll want to use a cookie cutter or a glass to cut out your welsh cakes.
  4. Pre-heat your non-stick frying pan or cast iron pan on a medium heat and cook them for 3-4 minutes each side then place on a plate or in a container and coat sprinkle some sugar on top.
