Vegan Mac 'n' Cheese - Serves 2
Ingredients
- 2 cups macaroni
- 1-2 tbsp plain flour
- 1-2 tbsp dairy free butter
- plant milk
- 2 heaped tbsp nutritional yeast
- paprika (to taste)
- cayenne pepper (to taste)
- chilli flakes (optional)
- 1 heaped tbsp vegan soft cheese (tesco free from)
- 50 - 60g vegan cheese (tesco chilli and jalapeno + violife)
Instructions
- Boil the macaroni in a saucepan with a pinch of salt.
- Melt the butter in another saucepan at medium heat, then add the flour and make a roux.
- Add in a small amount of plant milk and stir until it thickens, slowly continue to add more plant milk until you get the consistency you want.
- At this stage you'll want to add in the paprika, cayenne pepper, nutritional yeast and chilli flakes, if using.
- Stir in the soft cheese until it melts, then add the vegan cheese.
