Vegan Mac 'n' Cheese - Serves 2


Ingredients

  • 2 cups macaroni
  • 1-2 tbsp plain flour
  • 1-2 tbsp dairy free butter
  • plant milk
  • 2 heaped tbsp nutritional yeast
  • paprika (to taste)
  • cayenne pepper (to taste)
  • chilli flakes (optional)
  • 1 heaped tbsp vegan soft cheese (tesco free from)
  • 50 - 60g vegan cheese (tesco chilli and jalapeno + violife)

Instructions

  1. Boil the macaroni in a saucepan with a pinch of salt.
  2. Melt the butter in another saucepan at medium heat, then add the flour and make a roux.
  3. Add in a small amount of plant milk and stir until it thickens, slowly continue to add more plant milk until you get the consistency you want.
  4. At this stage you'll want to add in the paprika, cayenne pepper, nutritional yeast and chilli flakes, if using.
  5. Stir in the soft cheese until it melts, then add the vegan cheese.
